My first Pad Thai in Thailand

"Eat on the Street"

Always one for a recommendation, I asked a local we were booking a tour with, where to eat. She sent us to the main street that surrounds the old moat around Chang Mai. I observed the traders and  chose one who was producing Pad Thai at lightning speed. Her station looked clean and she was super efficient. I was a little hesitant with risk of “Thai belly” being a key subject in conversation that afternoon. As it turns out, it was fresh and delicious…I would soon realise that no two Pad Thai’s are the same in Thailand. Everyone makes it slightly differently…which makes ordering Pad Thai a fun food lottery!
